Overview of the current situation

Health and Safety regulations are changing all the time, never more than now in the food industry.

From January 2006 it becomes legislation that ALL food be refrigerated and kept at a temperature of 3-5deg.c at all times. Unless cool boxes are of a commercial type they won't do the job and records have to be kept of temperature checks carried out prior to and during any event.

Any food used at any of our events has to come from a reputable source and be able to be traced back to the supplier. This now even includes "Mrs Smith's'' homemade cake on the stall. She also has to keep records of when, where and who she bought the ingredients from and also her storage temperatures and cooking temperatures have to be recorded.

Environmental Health Officers (EHO's) can check any of these records and I am led to believe will be doing so next year across the country at many charity events.

It is advised that ALL food handlers do a Basic Food Hygiene course. These courses can be sourced through your local councils or colleges. It is for your own benefit that you do these courses; food handlers can now be held accountable for Food Poisoning.
